Apple Walnut Supreme Cake
My refrigerator is about to explode from all the baking apples I have right now. I forget and keep adding them onto various grocery lists. I keep coming up with a myriad of plans to make delicious fall recipes, both sweet and savory but my motivation and strength are failing me. My brain is a whirling picture show of pork with apples, apple pie, baked apples etc. Steeling my mind to do it, I’ve decided I’m going to do it today. I’m going to make an Apple Walnut Supreme Cake.
Apple Walnut Supreme Cake is a cozy home-style cake. It is extremely moist from the apples and stands on it’s own with no topping or glaze. If I had to assign it a cake category, I would put it in the snack cake group. I found the recipe originally in one of my mother’s Armenian church cookbooks. It is not, however, an Armenian recipe, but must have appealed to the women who used this cookbook. I’ve made this cake since the 1980’s and have given this recipe out many times to people that requested it.
I haven’t made this cake since I have been wheelchair bound and it looks like I can change up the tools and still be able to make it. Instead of using a hand mixer and doing the rest by hand, I think I can use my stand mixer on medium for the eggs and on low for the rest. My motivation remains high. I am going to do this. This cake is too good of a cake for me to go a whole fall without making it. The world needs more Apple Walnut Supreme Cake and I need it too.

Apple Walnut Supreme Cake
Equipment
- Stand Mixer or Handheld Mixer
- Peeler
Ingredients
- 4 cups coarsely chopped, peeled apples
- 1 ¾ cups Sugar
- 2 large Eggs
- 1/2 cup neutral Cooking Oil I like Crisco Vegetable Oil for this.
- 2 teaspoons Vanilla
- 2 cups All Purpose Flour
- 2 teaspoons Baking Soda
- 2 teaspoons ground Cinnamon
- 1 teaspoon table Salt
- 1/2 cup coursely Chopped Walnuts
Instructions
- Preheat oven to 350°F
- Combine apples and sugar and set aside.
- In a large bowl, mix the eggs, oil and vanilla. Beat for one minute on medium speed.
- Combine flour, baking soda, salt, and cinnamon. Alternate adding the dry ingredients and the apple mixture to the egg mixture.
- Stir in the walnuts.
- Pour into a greased 13×9 pan.
- Bake in the middle of an oven for 45-50 minutes. Test with a toothpick. Do not under bake.
