4 cupscoarsely chopped, peeled apples
1 ¾ cupsSugar
2largeEggs
1/2cupneutral Cooking OilI like Crisco Vegetable Oil for this.
2teaspoons Vanilla
2cupsAll Purpose Flour
2teaspoons Baking Soda
2teaspoons ground Cinnamon
1teaspoontable Salt
1/2cupcoursely Chopped Walnuts
Instructions
Preheat oven to 350°F
Combine apples and sugar and set aside.
In a large bowl, mix the eggs, oil and vanilla. Beat for one minute on medium speed.
Combine flour, baking soda, salt, and cinnamon. Alternate adding the dry ingredients and the apple mixture to the egg mixture.
Stir in the walnuts.
Pour into a greased 13x9 pan.
Bake in the middle of an oven for 45-50 minutes. Test with a toothpick. Do not under bake.
Modifications
Peeling the apples and cutting them is probably the most muscle fatiguing part of this recipe for me. Find a comfortable place and take as many breaks as you need to not exhaust yourself.I couldn’t use a stand mixer because the whips would break and mash the apple pieces. I used the stand mixer on medium to beat the egg mixture and after that I used the lowest speed which was “Stir” to incorporate all the rest of the ingredients. It worked beautifully and didn’t cream ingredients that just needed stirring in.Stirring in ingredients with stand mixer.As often as possible, I use bowls that have a pouring spout as well as a rubber ring on the bottom.
