Mock Chopped Liver

A quick and easy vegan replacement for Chopped Liver!

Ingredients

  • 3 Tablespoons Olive Oil divided
  • 1 1/2 cups chopped Onions
  • 2 cups sliced Mushrooms (White, Baby Bella, Cremini etc. and up to half Shitake)
  • 1 Tablespoon Lemon Juice
  • Salt and freshly ground Black Pepper to taste

Instructions

  • Heat 2 Tablespoons of the olive oil in a large skillet. Sauté the onions slowly over medium heat, stirring frequently, until nicely browned (this took me 15-20 minutes).

  • Add the mushrooms and remaining Tablespoon of olive oil and cook until the mushrooms are wilted down, about 5-10 minutes.

  • Combine the onions and mushrooms with the remaining ingredients in the bowl of a food processor. Process until pureed, scraping down the sides as needed.
    Pureed Mock Chopped Liver.
  • Serve with matzo, or raw veggies.

Modifications

The whole mock chopped liver recipe is a modification for me as I can in no way make actual chopped liver.
I chopped the onions in a food processor and rinsed it out lightly for the cooked onion and mushrooms with the other ingredients.
